Hi, I was wondering if we have talked about our desi khana yet?? Do you think it might be a good idea to compile a recipe book for new cooks like me...i keep asking my mum...so i know how to make kadi....the following in my opinion is our desi food (please correct and add...):

gojji
saag
gur
laadoo
baalushahi
baajre ki khichri
sheet

looking forward to responses........maybe we should have a section under resources for recipes :)

hw r u?? i'm Apoorv Chaudhary, sabse pehle i wanna 2 ask u that ,bajre ki khichdi maine pehli baar suni hai, buddy dishes to mujhe i also know in a huge quantity hw to prepare,
have u ever heard abt "churma" a dish made of chapatees,shakkar(jaggery(gudd) wali),ghee.
issko banate aise hain.. ki first of all prepare chapatees,break them inti small pieces,add shakkar into it with ghee,and mix them.Ab uss mixture ka little bit take in hand. and revolve it in ur hand, like u prepare laddoo,and then eat.
It will definitely like by u,n urs family,n also tell me about that.ok.

Dear Apoorva,

Bajre Ki Khichdi is a very popular dish among the Jat Community specially in Rajasthan, where a lot of Bajra is grown.

Other Jat dishes are Missi Roti, Raita of various kind, Kheer, Halwa, Puri etc. Also Makke Ki Roti aur Sarson Ka saag.

I am sure ladies can help the members about the method of preparation of these dishes.

Yes Uncleji" Bajre ki Khichdi" is really a popular and tasty dish... It has a great taste when we eat it with the DEHI in the breakfast.......... (Jis inssan ko neend nahi ane ki problem hai meri views maie to use yehi dish khani chiye..... really non stop sleep ati yeh dish khane ke baad"
)

Raita of CHULAI/ PALAK & the saag of GUWAR ki FALI are also tasty dish...

'Chule ke parathe' , 'taaja makhan' ar saath me 'malai aali dhai' is my favourite meal. and then dessert.....'Haare me baani kheer' and 'choorma' (kati ghee me gich) is the best.

ummm..muh me pani sa aagya bhai..aur;

1. Buraa Chawal
2. Ghee Shakkar
3. Gehnoo ke fulke aur urad ki daal, aam ka achaar
4. Kachee aam ki sabzi aur gehno ki rotti
5. Podeene se chunkee chaach aur rotti
6. ofcource evergreen gud and chupdee hee garam garam rottiyaan with Mathaa in breakfast..

Thanks Priti for starting a good thread.
I am from Rajasthan and there are many dishes that are very delicious and healthy.
Some of them are-
1.Rabri-isko 3-4 tareeke se bana sakte hain jaise chhachh ki rabri,khate ki rabri,koot ki rabri etc.
2.Gwar fali ki booji-isme fali ko ubal kar usme silbatte par pisi hui lal mirch aur doosre masale milaye jaate hain.uske baad ek bade bhagone me kuchh angare rakhkar unpar ghee dala jaata.isse jo dhuan banta hai usme mirch lagi fali ko dala jaata hai jisse usme bahut badhia khushboo ho jaati hai.isko bajre ki roti ke saath khane par badi swadisht lagti hai.
3.chilara-yeh moth ke aate se banaya jaata hai like missi roti.

Philhaal itna hi.
mujhe to booji bahut yaad aa rahi hai.

priti thts gud on ur part and ur mum...these all r very correct, but one thingg i think u hv forget is milk anytime to jat , and halva which is made on every ocassion whether it is marriage , b`day... but thts really gud on u.. to remember our beloved jaat recipe ideas...

kka, manne achi tahriya bera tha ika. Manne sochi, thoda sa kaka te gap-shap kar lu. :D
I am just wondering from where you get 'tottiyan' in UK. I am not into cooking , I have labenese bread/turkish bread instead. (I cant eat those packed roti and parata)

:D mujhe apni Maami yaad aagayi....homegrown chane ki daal with khet ke kheere tamatar aur roti....simple things can be so delicious...yummmmmm

So far we have the following deliciously deadly combos:

-Makki ki Roti with Sarson ka saag (add ons: Gud and sheet)...
-Chulhe ke Paramthe with loads of nooni ghee and malai waali dahi (add on: achar)
-Churma with Milk (anytime during the day but prefered in breakfast...thanks for reminding me of this Apoorva!)
-Baajre ki khichchdi (add ons: gojji, sheet/chchaj or dahi)
-Raabadi (how could I forget this...this is the start addition for sure...rabdi on a hot summer day...keeps the Loos away :)
-Buraa Chawal (my cousins used to mix this with rajma but i think its better on its own)
-Ghee Shakkar with any type of roti/rice
-Gwar ki Phali
-urad ki daal, gehu ke phulke aur achaar
-halwa poori and taridaar aaloo ki sabzi
-Chilara
-Kheer (haare ki)
-Jalebi with thandi rabdi
-aambi ki sabzi
-In chutneys: pudina, dhaniya, tamatar, chcholiya and so on....
-Raitas: bathue ka with hing ka tadka, sarson/chulai, ghiya (boiled ghiya) ...

Not to mention that all khichchdis and rotis should have dollops of ghee on them...

Sometimes I wonder why we are not an obese community.......we eat so much gheeeeee!!!

tu hisa kar ak tai ne leja amrica....roti te banae degi :)

Nice start Priti,
Welcome to Jatland

The Churma (laden with Ghee ofcourse) is best enjoyed with Chane ki Daal. It’s real taste comes only if we have Chulhe Ki Roti.
Makke Ki Roti aur Sarson Ka Saag can be had with some Ghee and Gud ki Dali.
Bajre ki Khichdi is indeed very tasty. Have it with Dahi or pour Seet on it and enjoy!! Have Rabri in early mornings.
My ideas:
1. When you go to some village – ask for Roti (they will surely serve you ‘Chulhe ki’) and Lal Mirch ki Chutni. Pour ghee over Roti (saare Belle mai ghee failla honaa chahiye), put some Chutni on it and enjoy all this with a big glass of Seet and a Gud ki Dali. Don’t forget - have this great lunch, sitting on a Khaat.
2. Ek thandi Roti le kar us par Nooni Ghee failaa lein. Uske upar Lal Pisi Mirch ya Boora burak lein (taste ke anusar – meetha/charchara). Ab ise gol ghuma kar roll bana lein. Lijiye taiyaar hai Desi Roll. Moonh mein daalein, budak maarein aur swaad le kar khaaein.

Great taste-buds!!! Get going!!!

In the order of preference:

Breakfast: 1. Missi roti + Nyonni ghee (white butter) + MuzaffarNagar ka Gud + garam garam doodh
2. 1 bada katora dahi

Lunch: 1. Sarson ka saag, Bajre ki Roti with Chhaach(namkeen lassi)
2. Daal-baatti-Churma(Rajasthani khana)

Dinner: 1. Dhuli Urad daal + Roti + Neemboo ka aachar + Hari Mirch + Ganthey(Onions) + Pudine ki Chutney
2. Ghee-Boora + Rice
3. Ghee-Shakkar + Salted Roti with lot of ghee + 1 bada glass garam dhoodh
4. Khadi - Chawal

I like milk and milk product only (No masale-dhar stuff).
We use to keep our own Buffalo 2-3 year back....Aur My Mom still live in our native village...I love "Bathwe Ka Rayta"," Bajjre ki rottee","Sarsaam ka saag" and "Glaas of fresh Milk".

Iss baat pe ek baat yaad ayee.

This is couplet I had heard in Haryana and some how convey same sublime
things of my life. Here we go:-


Bathhwe ka raayta howwe,sarsam ka saag bhi
Bajjre ki rotti, aur nuunni ghee ka swaad bhi.

Chulhe pe maa baithhi ho,thaali mein ghalati
Dhorre-e mein baithyaa honn Aalatti pe paalatti.
Kanssi ki thalli ho,Lambba sa Lassi ka gilass bhi

mera naam Apoorv Chaudhary, hai na ki Apoorva, i'm a male.Uncle ji main Rajasthan se nahin hoon, but i'm a jaat from western UP.

Uncle aapko dekha to ye khayal aya ki aapse main ye poochon ki,maine issi saal graduation clear kiya hai, balki ye kahen ki abi mera result aaya hai,uncle ji main army join karna chahta hoon, CDS ke through . Yes Goond Ke Ladoo.... wa mooh maie pani aa gaya.. It really has a great test.and healthy also... My mother make it in every winter season...

By the Way Khariti ke Ladoo and Dhaniye ke ladooo bi bhoot testy hote haii... kisi naie khye hai yeh...

Bhai Mukesh maine khaye hai dhaniye ke laddoo.bahut tasty hote hain.
Ab hyada yaad dilaoge to abhi India bhagna padega.

Though all jatland dishes are delicious I miss goond ke laddoo and gajar ka halwa very much. I remember when we were students in village, we used to prepare gajar ka halwa through contributions. In this context I wish to share an incident which I cannot foreget all my life. Once, during winter season we four friends decided to prepare gajar ka halwa. All required items e.g. carrots, sugar and milk were to be brought by different people. The fellow who was to bring milk came back saying his mother was not prepared to give him any milk for the purpose. We all felt sorry and decided to postpone the preparation. But the fellow was against any postponement and assured us that come what may he would definitely bring the milk and so he did. But when we came to know how he had managed to bring the milk we were rolling all over laughing. He took out the milk from "kadhawani" and replaced with "khal ka paani" (jo ki shaani bhewan ke kaam aati hai). His poor mother was telling everybody "he aaj to mhara doodh paatgya, nu bera hota to chhore ne eh de deti. Every time I see gajar ka halwa I can't stop smiling and the incident come alive. Some years latter when we told his mother the truth her response was "eh bhai gajar ka halwa main bana doongi par pher issa kaam mat kariyo, meri issi badhia kadhwani bigad di thi " and laughed a lot.

RK bhai mar ge hans-2 ke.It was as if i was there in the gang preparing Gajar ka halwa. Innocence of our Great ladies coupled with Innocence of young boys in choosing wrong water. Lot-pot hoge bhai saheb. Thank you.
